Our Mandarin & Galangal Marmalade is a fine-cut, aromatic marmalade made by hand in small batches using in-season mandarins and fresh galangal root.
Each batch begins with whole mandarins — peel, juice and flesh — slow-cooked with sugar until the peel softens and the marmalade reaches a firm, glossy set.
Fresh galangal is grated through at the end, giving it a warm, floral-ginger edge that sits underneath the bright citrus bitterness of a classic marmalade.
This marmalade is made in regional NSW as part of The Seasonal Companion's small-batch preserve range, with a focus on real ingredients, seasonal produce and simple, generous flavour.
