Our Dulce de Alcayota is a traditional Chilean dessert preserve made by hand in small batches using roasted spaghetti squash strands.
Each batch begins with whole spaghetti squash, roasted and separated into long strands, then thoroughly drained before being slow-cooked with raw sugar, orange zest and juice, and whole cloves. The strands are kept long on purpose, so the texture stays true to the traditional recipe — soft and translucent, coated in a glossy citrus-clove syrup.
This preserve is made in regional NSW as part of The Seasonal Companion's small-batch preserve range, with a focus on real ingredients, seasonal produce and simple, generous flavour.
Uses:
Spoon over ricotta or yoghurt with crushed walnuts, use as a pastry or tart filling, or serve alongside aged cheese on a board.
