Our Blood Plum Sauce is a rich, savoury fruit sauce made by hand in small batches using seasonal blood plums from the Granite Belt, onion, vinegar, brown sugar and whole spices.
Each batch begins as our Blood Plum Chutney, with ripe blood plums slowly cooked alongside onion, malt vinegar, red wine vinegar and a warm spice blend until the fruit breaks down and develops its deep, complex flavour. A portion of the chutney is then carefully separated, blended smooth and refined into a glossy, pourable sauce.
The flavour is sweet, tangy and warmly spiced, with the natural richness of blood plums balanced by a proper vinegar lift. Smooth and versatile, it brings the same bold flavour as the chutney in a texture designed for drizzling, glazing and serving.
This sauce is part of our zero-waste split production method, where the same seasonal blood plum base is carefully used to create both a chunky chutney and a smooth pourable sauce. Same batch, two textures, each made for a different purpose.
This sauce is made in regional NSW as part of The Seasonal Companion's small-batch preserve range, with a focus on real ingredients, seasonal produce and simple, generous flavour.
