Dried bay leaves are used in cooking for their distinctive flavour and fragrance. They are a fixture in the cooking of many European cuisines (particularly those of the Mediterranean), as well as in the Americas.
They are used in soups, stews, meat, seafood, vegetable dishes, and sauces. The leaves also flavour many classic French dishes.
The leaf of the plant can be boiled and the water used for the treatment of various medical problems. The herbal tea, prepared using dried bay leaves, is said to be effective in treating digestive disorders.
Both the fruit and the leaf contain essential oils that are sometimes used in treating arthritis, headaches, joint pains, swelling and others.
Bay leaves can deter pantry moths - scatter dried leaves on shelves and keep a few leaves in the top of jars containing flours and grains.
All the herbs I sell are grown on my property and air-dried. I use no chemicals in the growing or processing of my herbs and source organic and open pollinated seed and plants from which to propagate wherever possible.
