Fennel is a flowering plant species in the carrot family. It is a hardy, perennial herb with yellow flowers and feathery leaves. All of the plant is edible with the seeds and leaves used most often.
A popular spice in the Mediterranean and European regions, fennel is often referred to as “the fish herb”. Use fennel in fish soups, add them to meatballs, pasta sauces, pepperoni, pizza, salami, breads and salads. Throughout Asia fennel is used to season cabbages, fish sauces, roasted lamb, mutton and pork curries, sweet and sour dishes.
Fennel is an excellent source of vitamin C. It is also a very good source of dietary fibre, potassium, molybdenum, manganese, copper, phosphorus, and folate. In addition, fennel is a good source of calcium, magnesium, iron, and niacin. Fennel is often used for colic, wind, irritable bowel, kidneys, spleen, liver, lungs, suppressing appetite, promoting menstruation, improving digestive system, milk flow and increasing urine flow.
All the herbs I sell are grown on my property and air-dried. I use no chemicals in the growing or processing of my herbs and source organic and open pollinated seed and plants from which to propagate wherever possible.
