MIDDLE EASTERN BAKED CHICKEN

1.6 kg Chicken
1 cup instant couscous
8 pitted dates, chopped
8 dried apricots, chopped
2 tbs lime juice
1 tbs olive oil
1 tbs butter
2 onion, chopped
3 clove garlic, chopped
1 tbs My Gourmet Flavours Mediterranean Herbs

1/2 tsp salt
2 teaspoons My Gourmet Flavours Moroccan Ras el Hanout

Wipe and pat dry the chicken with a paper towel. Pour 250 ml boiling water over the couscous and set aside for 15minutes for it to swell and soften.
Soak the dates and apricots in lime juice.
Heat the oil and butter in a pan, add the onion and garlic and cook for 3 minutes. Remove from heat
Mix together the onion/garlic mix, couscous, dried fruit and the Mediterranean Herbs. Add salt to taste.
Spoon into the chicken cavity and close with a skewer.
Rub the chicken all over with some extra olive oil, the Ras el Hanout and salt.
Place into a baking tray and place in the oven for approx 1 1/2 hours, until the chicken is golden and no blood.
Wait approx 5 minutes before carving.
